Cinnamon Bun Muffins

Ingredients:

For Muffin Cinnamon Topping:

  • 2 tablespoon coconut nectar
  • 1 tablespoon cinnamon
  • 1 tablespoon coconut oil

For Muffin Mixture:

  • 1 cup blanched almond flour
  • 2 tablespoon coconut flour
  • ½ teaspoon aluminum free baking soda
  • ¼ teaspoon sea salt
  • 3 eggs
  • ¼ cup coconut nectar
  • ¼ cup coconut oil
  • 1 tablespoon pure vanilla extract

Directions:

Preheat oven to 350 degrees.

For Topping:

Combine coconut nectar, melted coconut oil and cinnamon in a bowl.

For Muffin Mixture:

  • Combine almond flour, coconut flour, baking soda and salt in a bowl.
  • In another bowl blend together eggs, coconut oil, coconut nectar and vanilla.
  • Add dry ingredients into wet and stir to combine.
  • Fill a greased muffin tin with the muffin mixture.
  • Spoon topping onto muffins.
  • Bake muffins for 8-12 minutes at 350°
  • Cool muffins for 2 hours.

Makes 9 muffins.
